That’s a great question! Dry elderberries are crushed and mixed with water before being processed for 2 hours at a moderate temperature. Once complete, the extract solution is drawn off. This processing is completed a total of 3 times using the same crushed fruit. After the final processing, all extraction solution is combined, filtered, concentrated, and dried into a powder. Processing the mixture 3 times helps to ensure that as many of the beneficial components from the fruit make it into the final product!
